1/4 cup (50 mL) milk, skim or 2%
1/4 tsp (1 mL) pure vanilla extract
1 Red Prince apple, cored
pinch of cinnamon
8 slices multigrain bread
4 oz (125 g) old white cheddar, sliced or grated
4 slices bacon, cooked and chopped
In a shallow bowl, whisk together eggs, milk and vanilla, set aside.
Thinly slice apple and toss with cinnamon and set aside.
Heat a non stick pan over medium heat and lightly spray with cooking oil. Dip 1 slice of bread into egg mixture and place on hot pan and top with 1/4 of apple slices and 1/4 cheddar. Top with another slice of bread dipped in egg mixture. Cook until golden brown and the cheese is completely melted, approximately 3 to 4 minutes on each side.
Repeat method for remaining 3 French toast sandwiches.
If desired, keep warm in 200?F (100?C) oven until ready to eat.
Serve with bacon bits and maple syrup.
Tip: substitute bacon for ham or turkey bacon.
